Aren't we committing shirk and kufr unknowingly? How is it possible to avoid it?

AssalamuAlaikum

Ofcourse it is possible, inshaAllah. To state so otherwise would be to claim Allah is unjust (Nauzubillah..)

Contemplate brother on these verses brother. Contemplate, reflect, and think. These verses should be written in gold:

"Allah intends for you ease, and does not want to make things difficult for you" [2:185];

Thats right. Ill mention it again.

"Allah intends for you ease"[2:185]

Ill mention it one more time:

"Allah intends for you ease."[2:185]

Do you believe in this statement?

You are a Muslim, and it is in the Quran, so you believe in it, right?

If so then stop worrying about things which are beyond your capacity and control. Keep on moving between fear and hope. Not just fear. Not just hope.

InshaAllah this verse will have the cure to some psychological problems some Muslims face.

"Allah does not want to place you in difficulty" [5:6]

Salaam brother,

If a person commits a sin either because:they did not know that it was wrong, orthey genuinely forgot, orthey were forced tothen they will not be held accountable for that sin.  This is only fair since it is something a person has no control over themselves and it would be unjust to punish someone on this basis.

Consequently,, Allah says in the Qur'an:

"And there is no sin on you concerning that in which you made a mistake, except in regard to what your hearts deliberately intend. And Allah is Ever Oft‑Forgiving, Most Merciful"(Qur'an 33:5)

So rather than being judged on deeds, Muslims are judged on intention, for a person's intention is a true reflection of whether they did something out of disobedience to Allah or whether it was because they could not help it.

In a hadith Mohammad Salallahu 'Alaihi Wa Salaam said:

"Allah will forgive my ummah (i.e. the Muslims) for their mistakes, and for what they forget, and for what they are forced to do."

It is every individual's responsibility to avoid shirk. Stay on the path of Allah Subhanahu Wa ta' ala and do that which is prescribed. Strive to do the best that you can. jazakAllah
